Egusi soup is a delicious Nigerian dish that is made using ground melon seeds as a base. It is typically cooked with vegetables and various meats or fish. Here is a step-by-step guide on how to prepare Egusi Soup:


Ingredients:

- 2-3cups ground Egusi (melon) seeds

- Assorted meat/fish (beef, goat meat, chicken, fish, etc.)

- Palm oil

- Stockfish (optional)

- Dry fish (optional)

- Assorted vegetables (spinach, bitter leaf, ugu, etc.)

- 2 onions, chopped

- 3-5tablespoons ground crayfish

- Pepper to taste

- Seasoning cubes

- Salt to taste


Instructions:

1. Soak the stockfish in hot water for about 15-30 minutes to soften it. If using dry fish, you can also soak it in water to remove any dirt or sand.

2. In a pot, cook the assorted meat/fish with chopped onions, seasoning cubes, and salt. Add enough water to cover the ingredients and cook until tender.

3. While the meat is cooking, blend or grind the Egusi seeds into a smooth powder.

4. Heat palm oil in a separate pot, then add the chopped onions and sauté until they become translucent.

5. Add the ground Egusi to the palm oil and onions, stir well until the Egusi is well coated with oil.

6. Reduce the heat and continue stirring for about 5-10 minutes to cook the Egusi properly.

7. Add the meat/fish stock to the pot of Egusi, a little at a time, stirring continuously to prevent lumps from forming.

8. Add the cooked meat/fish, stockfish, and dry fish to the Egusi pot. Stir well to combine.

9. Add the ground crayfish, pepper, and seasoning cubes. Adjust the seasoning and add salt to taste.

10. Cover the pot and let it simmer for about 10-15 minutes to allow the flavors to meld together.

11. Wash and chop your desired vegetables (spinach, bitter leaf, ugu) and add them to the pot. Stir well and let it cook for another 5-10 minutes until the vegetables are wilted.

12. Taste and adjust the seasoning if necessary. Ensure the Egusi is properly cooked and no longer tastes raw.

13. Your Egusi Soup is ready to be served! It is typically enjoyed with a side of pounded yam, eba, fufu, or any other Nigerian swallow.
